What is Amazake?
Amazake is an ancient fermented rice drink which originated in Japan and is still popular there today. It is made by fermenting rice with Aspergillus oryzae – the same organism used to make miso and soy sauce.
Our Amazake is a sweet and smooth drink, that is full of flavour. We have created two initial versions – ginger with turmeric, and matcha tea.
Benefits of Amazake
Amazake is believed to have many health benefits. The process of fermentation transforms rice into a nutritious energy boosting tonic. Rice carbohydrates get broken down by Aspergillus oryzae enzymes into glucose and other saccharides, including oligosaccharides. Glucose gives Amazake its sweetness and the oligosaccharides provide goodness for the gut. The fermentation process also results in the production of essential amino acids and B vitamins.
We are a small food company based in Co. Meath, Ireland, and we are passionate about fermentation.
